Sometimes in life, you just can’t get enough! The list is endless where you can get “caught up” in whatever you are doing and seem like you “just can’t get enough!” That can get you into trouble, if you don’t watch out. For example, who doesn’t like sex? Now everyone will say that you can never get enough! Scooch on over to Grandma’s house where Gramps just got his prescription of “Viagra” or Cialis and Grandma will be screaming, “Stay away from me” because Gramps will be saying, “I just can’t get enough” or take the person who just goes from one person to another, because they just can’t get enough! Wow, they are going to be regulars at the doctors office, too, with those kind of habits. So just like anything in life, one must temper themselves to lead a more balanced life in regards to any situation we are talking about.
Another example of this is say you are eating one of the creations you have made after reading one of these articles. Since Mango’s recipes are all so “Mouthgasmic”, you may want to eat the whole dish or dessert, all at once, because you “Just can’t get enough!” Now that may be cool once in a while but again, if you continue in that habit, you may be suing me later for extreme weight gain!
Hey if you haven’t noticed the two above scenario’s are also things that we humans DO! When we want to feel “Good” we tend to either “Eat” or have “Sex”, those are the two most commonly “gone to” sources for pleasure in the human being. We all want to feel good and with all of the challenges that we all face daily, we all tend to seek pleasure as often as possible, to relieve the pain we are feeling from our everyday situations that tend to be more stressful than pleasurable.
Once realizing this, that is where tools come in handy. Tools like meditation, a nice massage monthly or bi-weekly, yoga classes, reiki. These are all ways to reduce stress in our bodies and create a more “Pleasurable” feeling within. You could probably say that you just can’t get enough of this and you are right, you can never get enough balancing in your life.
Todays recipe is one that you may want “S’mores” of! Yes, these s’mores muffins are mighty tasty and this may be one of those times when you just can’t get enough and eat the whole bunch! Try to share them as quickly as possible so you won’t be tempted, either that or have a great big cup of coffee (or glass of milk, it you can drink milk) and “MOW” down!
Tip: Remember when making muffins or any quick bread, is to NOT over MIX!
1/3 cup of oil (vegetable, coconut)
1 cup of milk (2 % or whole)
1 teaspoon vanilla
1 – egg
Place these ingredients into a bowl and reserve. In a separate, larger bowl, add the following:
2 – cups Unbleached A.P. flour
1/4 cup Cocoa powder
1 – Tablespoon baking powder
1 – teaspoon salt
Pinch of Nutmeg
1/2 cup – raw sugar
Mix the above ingredients together. The gently mix in the wet ingredients. Then fold in the following:
1 – cup mini marshmallows
1- cup dark chocolate chips
Sugar for tops
In your prepared, cupcake sleeve lined muffin tins, scoop with a 3 oz. Ice cream scoop the muffin mix into the sleeves, sprinkle a little raw sugar on top and place into a pre-heated 350 degree oven for approximately 15 to 20 minutes or until they spring to the touch.
Remove and let cool some before removing from tins. Serve warm or place into a sealed contained to keep fresh. Not that they will last that long, but they only are good a day or so, because of no preservatives. If you are making them for you and will have some left over, freeze them and then remove when you want a treat, once in a while!
Treats! We should treat ourselves and everyone we pass along our journey with love, kindness, compassion and genuine concern for one another! The journey of life moves much quicker than many of us realize and the key is to enjoy every moment that you can! Don’t take life so seriously! The journey is meant to have pot-holes, mountains, dead-ends and more! One of the best things that we can do is stop every once in a while and look around! Yes, just look around at all of the beauty that is right there, right now, right in front of you! There is never a time when “nothing” is going on!
So as you wind down your week and head into the weekend, have one “S’mores” muffin, grab the rest to pass out and hit the road!
