One moment, you are born. In a “Flash”, your life is over and you are born into “God’s” world. The “Flash” is your life, what happens in that “Flash”, is up to you. Some people say, from their interpretations, that our lives are pre-destined. In a sense, they may be right, except that they forgot to mention, that life is much like the game show, “Let’s make a deal.”
Life is like the final round where you can choose from three different doors. Well, in life, in most cases, we always have at least two choices… to be grateful or not to be grateful. Now, depending on the decisions that we make along our journeys, is what determines the direction that we are going. Who knows, but maybe there is a great choice (door #1), an “O.K.” choice (door #2) and then a choice that leads you into the “dark”, a place where you do not grow (unless you are a spore, a mushroom… door #3)! So, depending on how we react to situations, is how we are going to feel and determine what actions that we will take along our journeys called life.
One thing for sure is to appreciate and have “Gladitude” for your “Flash”, your life! Think of our lives and the world as the sky and that we are the shining “Stars” in that sky! So shine bright! Be grateful! Have so much love inside of you that it is impossible to not overflow and give that love to the world. The world is so in need of love, a “Hug” and more of a “human touch!” Every day, all around me there are people so in need of just a little “Love”, a little attention, someone to tell them that they are special. Just that little bit of encouragement will make a “HUGE” difference in someone’s life.
Some creations in the food world can go from “Par excellence” to disaster in a “Flash” too! For example, don’t slam the oven door if you have a soufflé or an “angel” food cake in the oven. It will definitely deflate that creation, in a “Flash!” Turn up the burner on a delicate sauce and in a “Flash” you will have a disaster.
Side note (left side): One day, someone turned up the burner on a red sauce (Sunday sauce, spaghetti sauce) that was being made and before you knew it, it was scorched and ruined, that had taken me two days to make prior to make! The moral of the story, as in life too, is to slow down, to appreciate and to have “Gladitude” for every moment. Also to approach everything with “LOVE!”
Eating is the same too! Don’t go rushing through your meals so fast. Actually, eating fast causes several health issues and you don’t really enjoy what you are eating. Seriously, some people shove the food in so fast, that the food rushes by their taste-buds and doesn’t even give them a chance to enjoy what is passing by them! Your taste-buds are screamin’… “Hey, slow down, I want to enjoy some of you!” Besides you can get “acid reflux” from eating to fast along with a few other ailments to the body. So don’t go through your meal in a “Flash”, slow down and enjoy the moment.
O.K. today’s recipe is going to be challenging! No, not in the fact of how you make it. NOPE! It is challenging because it taste so damn good that you are going to want to “Wolf” it down. In all reality, you will enjoy it more if you savor every bite! Mango tends to bake a lot but Mango is a full on “chef.” It is just easier to pass out baked goods then to carry a meal around, if you know what I mean, Vern!
The alternative though, is to throw a dinner party and to invite people over, to share with and to create some beautiful moments in yours and their lives! Then, once again, you will be doing your part in creating “world peace”, one “Mouthgasm” at a time! So, you are wondering by now, what is the freakin’ recipe!
Well, with spring in the air and summer time approaching fast, this is a great party recipe to share and invite friends (and strangers, too) over to enjoy. Mango’s Floribean fajita bar featuring Mango’s famous “Mango” salsa will definitely create multiple “Mouthgasms” for everyone around and will keep that party rolling!
“Mangos” Floribean Fajita bar
- 4 – Fresh mangos or 32 oz. fresh mango slices (in produce sections of most stores), chopped into a large chop (by hand, NOT in a food processor, it will turn to mush)
- 1 – Fresh pineapple, cleaned, cored and chopped into a medium fine chop or 1 – 18 oz can of Crushed pineapple in pineapple juice, (not syrup)
- 1 – medium size purple Spanish onion, finely chopped
- ½ – teaspoon Fresh chopped garlic
- 2 – Tablespoons Key lime juice
- 2 – Tablespoons Champagne vinegar
- ½ – bunch Fresh cilantro, chopped
Combine all of the above ingredients and serve with spicy blue corn chips or chips of your choice. This salsa goes excellent on grilled pork tenderloin or pork chops; is great on grilled fishes like salmon, tuna or swordfish. In later recipes, it is part of my crab cakes or my Floribean Chicken fajitas that follows.
“Floribean” fajita bar with mango salsa For 4 – 6 servings
- 2-3 # boneless skinless chicken breast or * – any meats, fish or veggies you prefer (or a mix of all)
Marinade: Combine all of the following:
- 1 – cup Mango juice or nectar (available in ethnic area of most major grocery stores)
- 1 – cup Guava or passion fruit juice
- ¼ – cup Soy sauce
- ¼ – cup Key lime juice
- 1 – cup MJM salsa
- 2 – Tablespoons fresh chopped garlic
- 1 – Tablespoon fresh chopped ginger
Combine all of the above ingredients. In large Ziploc Baggies, place the chicken breast* and the marinade. Refrigerate overnight.
The next day, have the following items ready, displayed in colorful bowls, plates, and baskets on a buffet or display table or counter:
- Chopped Fresh tomatoes
- Chopped or shredded lettuce (or nice European baby lettuces)
- Sour cream (lite or regular)
- Shredded cheddar cheese
- MJM salsa *(above recipe)
- Tomato salsa (Homemade or store bought)
- Soft large flour (or flavored) tortillas
- Hot sauces
Preheat a grill (see reference section). Grill off the chicken breast until it is fully cooked and place in a heatproof plate or in a chafing dish to keep warm. Serve with the above accompaniments and get ready for yet another, “Mouthgasm!” Wow, that is fun and tasty! You could substitute any meats or fish, that you want or even go vegetarian with portabella mushrooms marinated, zucchini or yellow squashes, baby eggplants… the list is endless including firm tofu, marinated in the above marinade and then grilled. So as you can see, the salsa and the marinade is the base and you can then create your own custom party from there!
“Life, so they say, is but a game and we let it slip away.” Don’t let your life, your “Flash”, slip away without making it the brightest “Flash” that you can. Because, “We may never pass this way again. Dreams, so they say, are for the fools and they let ’em drift away.” Don’t let your dream drift away, you can do it. Believe in you. Peace
