The Wise Restaurant & Bar makes an intention to support local, sustainable businesses and has developed partnerships with a host of farmers, purveyors, distillers and vineyards that are showcased on their seasonal menu.
The spirit is approachable. Caters towards locals and travelers alike and serves modern Wisconsin-inspired cuisine. The scene is modern, active and cordial. Acknowledged right away during a busy evening, the customer service is incredible. Greeted and sat with a good friend, the ambient music and played in the background while we were greeted by our server whom recommended the following coursed meal to truly experience The Wise menu:
Starters began with a Roasted Pear Salad – Local Pears, Mixed Greens, Quinoa, Goat Cheese, Hazelnuts, Honey Vinaigrette as well as the Citrus Fennel Salad – Citrus Segments, Shaved Fennel, Arugula, Prosciutto, Blood Orange Vinaigrette. This was paired with an Albarino, Fillaboa, 2013 – Rias Baixas, Spain
The main courses were hearty and flavorful the first main dish was a Roasted Chicken Breast with Apples, Pearl Onions, Brussel Sprouts, and Apple Brandy Jus. The additional main course was a Pork Chop consisting of Canoe Harvest Wild Rice, Butternut Squash, Dried Cranberries Pecans, and Maple Bourbon Jus. This was paired with 2 specialty cocktails named: Summer in San Francisco containing Laphroaig Quarter Cask Scotch, Uncle Val’s Botanical Gin, Sage, Thyme, and Lemon Juice and the second specialty cocktail was titled: Walk in the Orchard containing Domaine Dupont Calvados, Domaine de Canton, Lillet Blanc, Rosemary, Orange Peel, and Lemon Juice
The meal ended with two sweet finishes a Poached Pear with scintillating pairing of Crisp Tuile, Port Reduction andSpiced Chantilly along with a Chocolate Cake, enticing & luxurious, draped in a chocolate ganache, accompanied by a tangy cherry saucey.
Each dish was unique and flavorful with a well paired beverage. Highly recommended spot to nosh in Madison, Wisconsin.
