The JW Marriott Miami’s restaurant, the Trapiche Room is offering a four course, Valentine’s Day price-fixed dinner that is sure to percolate passions and romance between couples. The JW Marriott’s Executive Chef, Alex Paz has comprised a menu that is sure to delight all the senses and make the occassion memorable for every couple. Chef Paz is a South Florida native and has infused his dishes with influences from the Caribbean, Central America, Europe and Southeast Asia. Since becoming the Executive Chef at the JW, he has reached out to local farms in the state and established relationships with them to bring fresh farm-to-table foods on the menu. The Trapiche room combines with Chef Paz’ creative culinary expertise in providing a elegant setting that will delight the eyes and paint one’s partner in a new light. The room has many tables but their position in the room makes the customers feel comfortable, almost private from everyone else.
The dinner is offered with wine pairings as well or separate. It starts with hors d’oeuvres (amuse bouche) of Chef’s Creek oyster with cucumber jalapeno salt water and organic prosecco mionetto and then blends into the first course which is Sumatra and cinnamon braised wagyu cheek with celeriac puree and wild mushroom (prosecco accompaniment). The second course is a black truffle (spicy and strong) and Taleggio potato with soft poached egg followed by a third course of chocolate dusted prime filet with a stone crab risotto. There is another option than selecting the prime filet which is a Coho salmon poached in Sumatra honey butter. If one could find the room after this decadent meal, the final course is a Red Velvet rum cake with sweet cream ice cream and frozen Gianduja mousse (paired with a Fine Tanny port).
