Diet food – ugh! Jello – double ugh!! If that is your reaction to low calorie, sugar-free desserts, then it’s time to open your mind, your heart and your mouth. This incredibly simple and yummy dessert starts with sugar-free black cherry Jello. It adds unsweetened tart cherries, unsweetened applesauce and a can of diet Sprite (or any lemon-lime soda). Heat, mix, dissolve and chill – it’s that simple. What a sneaky way to get your fruit servings delivered in a pretty, low-calorie package that tastes like a real dessert.
The unsweetened pie filling is available in the baking aisle of local Meijers stores. You can also use frozen tart cherries, if you prefer. The consistency of this dessert is different from most gelatin-based creations, because the applesauce and cherries give it a puddinglike consistency.
Spritely Cherry Gelatin Dessert
1 pk. (4 serving size) sugar-free black cherry gelatin
1 c. unsweetened applesauce
1 16 oz can unsweetened tart cherry pie filling, or
2 c. frozen pitted tart cherries
1 12 oz. can diet Sprite (1 1/2 c.)
Heat 1 c. applesauce until it simmers; stir in and dissolve contents of package of black cherry gelatin. Slowly pour in diet soda (mixture will begin to fizz). Gently fold in cherries, distributing evenly throughout gelatin and transfer to sherbet glasses, filling evenly. Refrigerate until gelled, at least 4 hours. Serves 4 – 6.
