Mondays, they are the beginning of a prosperous, new week! That is one way to look at it or you can choose differently, because everything in life is a matter of “choice!” We are not saying that everything is smooth sailing and that your decisions will be easy ones! Sometimes “life” does throw some stuff at us that we can’t always “dodge” out of the way, so it is how we react that counts, now!
We all have different situations in life that sometimes makes us stumble. Like Frank Sinatra once sang, it is in those times where we have to “Pick ourselves up, dust ourselves off and start all over again!” True success happens when we don’t give up, when we keep forging ahead even though the trail looks dark and gloomy. It is during these times when true hero’s emerge and show their true strength. We all have the power it is just some of us choose not to “tap” into our hidden source, our Eternal powers. Every athlete, every performer knows that in order to be the best, you can’t worry about what the other guy (or gal) is doing, no it is only important to know that YOU are doing your best! That is all that matters, that you “out-do” YOU everyday!
Today our recipe is a simple one yet it involves some techniques that if you are not aware of them, the recipe will not turn out good at all! Sometimes that is the cool part of life, knowing the little tricks, that is where age is wisdom and time is your friend. Patience is a virtue, learned along our journeys so that we do grow older, wiser and able to teach others what we gathered along our journeys!
Now this recipe originated overseas on this wee, tiny island called “Scotland!” The scone is a single serving cake or quick bread. It could be associated with a cookie too, but technically speaking is a quick bread. Slightly sweet and buttery, the trick to a scone, like a quick bread is 1) to not overwork the dough or it tends to get tough and 2) The butter needs to be extremely cold.
Many bakers in the past will use a pastry cutter to cut the butter into the flour or by hand. Mango is always looking for ways to make the steps easier and more efficient, so after several attempts, using the “food processor” works excellent.
- 2 – cups Unbleached A.P. flour
- 1/3 cup – raw sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon Salt
- dash of Nutmeg
- 8 Tablespoons butter (1 stick)
- 1 – Large egg
- 1/2 cup Sour cream
- 1 Tablespoon milk
- 1 teaspoon vanilla (optional)
- 1/2 cup currants (optional)
Mix all dry ingredients of bowl of a larger food processor. Place the dry ingredients in first and mix. Then cut the butter into slices and pulse until crumbly (that is why it is necessary to have the butter very cold). Next, mix your wet ingredients into a measuring cup (for easy pour) and start pulsing the food processor and dump, all at once, the liquids into the machine. While pulsing mix until the dough forms on top of the blades and STOP! Do NOT overmix!
Remove the dough from the processor and with a little flour, lightly knead the dough and form into a disc. On a floured surface, roll the dough into a square about 3/4 inch thick. Cut into squares and then cut in half to make triangles. Place the triangles on a parchment lined, sheet pan and brush with your reserved egg wash.
Place into a preheated 400 degree oven and bake until golden brown, about 12 to 15 minutes. Remove and let cool. Serve with some jams and jellies, a cup of tea or coffee and you will soon be experiencing a simple yet powerful “Mouthgasm!”
Remember you don’t want to be selfish, so invite a few friends over for an “afternoon tea” and celebrate life! O.K. you can also make up little bags of scones, get some to-go cups for coffee and make a pot of coffee, fill the cups and go out and make some home-less peoples day! Pass out scones and coffee and give some others a moment of “Happiness!”
Why not, life is meant to share, to do for others and to live a more peaceful, loving life! Today is also the last day of Chinese New Years! So that is another reason to create these treats and pass them out today! Celebrate life from around the world. We are now creating a “One world society” and it is starting with YOU!
