Turn boring the boring French fries into delicious fries by adding a few simple ingredients such as Parmesan cheese, parsley, garlic and thyme.
Potatoes are a staple in our household and we serve them often with our supper meals. They do not cost a lot of money, they help in filling up stomachs, and they have nutritional value as well.
It is a shame that many people peel their potatoes before they use them, because the skin is where all the nutrients are. The skin from one potato provides 620 milligrams of potassium supplying 18 percent of a percent of the recommended daily allowance for potassium.
Parmesan Cheese, Parsley fries
- 4 large potatoes
- 1/4 c. olive oil
- 3 cloves garlic, minced
- 1/2 tsp. ground thyme
- 1/4 tsp seasoned salt
- 3/4 c. grated parmesan cheese, divided
- 1/4 c. parsley fresh parsley or 1 1/2 Tbs. dry parsley
Preheat oven to 425° Fahrenheit. Lightly oil a baking sheet with olive oil and set it aside to use later.
Thoroughly wash the potatoes and then dry the outsides. Cut the potatoes into strips with a French fry cutter or you can cut them into 1/4 inch strips with a sharp knife.
Place the potatoes in a mixing bowl and drizzle the olive oil over the top. Toss them around in the bowl so all sides of the potatoes are covered with olive oil.
In a small bowl, mix the garlic, thyme and season salt. Sprinkle this mixture over the potatoes, tossing to coat all sides of the fries. We usually sprinkle a little bit of the mixture over the potatoes, then toss the potatoes to distribute the seasoning, and then we sprinkle a bit more seasoning, repeating until the seasoning is gone.
When the potatoes are evenly coated, spread them out onto a baking sheet in a single layer. Leave the extra oil at the bottom of the bowl because you will need that later.
Bake the Parmesan fries in the preheated oven for 15 minutes. Remove them from oven and turn the fries over so the other side gets nice and brown. Return the potatoes to the oven and bake for another 15 minutes.
Remove the fries from the oven and put them in the bowl with the excess olive oil. Sprinkle a 1/2 cup Parmesan cheese and the parsley over the top a little at a time, tossing the fries so all sides have parmesan cheese and parsley over the top.
Return the Parmesan French fries to the baking sheet and continue to bake them another 10 minutes or until the Parmesan cheese melts.
Remove the fries from the oven and sprinkle over the tops another 1/4 cup Parmesan cheese and 1/4 teaspoon seasoned salt.
