Here is another impressive dish for the holidays that is really pretty simple to make all year long. They are my twice baked potatoes. They go great with any kind of steak, prime rib, pork, fish or heck, leave out the bacon, serve with some other veggie dishes and have a total vegetarian meal! Don’t know for sure, but you might have twice as many “MJM Mouthgasms”, too! Since it is the holidays, it is totally O.K. to give and to receive, if you know what I mean, Vern!
Wow, these are some good taters and they are not that difficult to make. You want to wash your potatoes first, then score the top of the potato, just cutting through the skin, in an oval pattern. You are making the opening ready, so when the potato is cooked, it is easier to scoop out the potato. Sprinkle Kosher salt on the potato, then wrap the potatoes in foil and bake at 350 degrees for about an hour or until tender inside.
Open the foil and peel off that piece of skin that you pre-sliced. Scoop out the potato, putting the potatoes into a bowl. Mix with butter, sour cream, chives, garlic powder, salt, pepper and cheddar cheese, bacon bits (optional). Mash the potatoes until mixed together, do not over mash though! Place the potato mixture in a Ziploc baggie with one of the corners cut off. This is a makeshift pastry bag that is disposable, for easy clean up! Next, pipe the potato mixture back into the potato shell. You can top with broccoli florets (*optional, fold in after potatoes area mashed).
Place back into the oven, bake until the top is nice and golden brown.
Side note: you can top off with more cheddar before placing back into the oven for a cheesier potato.
Once, no twice baked potatoes
- 4 – Large Idaho or russet potatoes, washed and pre-sliced on the top
- 4 oz. – sour cream
- 1/2 – stick butter 4 oz.
- 2 cups – shredded cheddar cheese
- 1 Bunch – chives, chopped fine
- Pinch of garlic powder or finely chopped fresh garlic
- Salt and fresh ground pepper, to taste (use salt sparingly, cheddar cheese will add salt to taste, naturally)
- Bacon bits – optional
- Cooked broccoli – optional
