One thing I keep repeating because in most cases, with us humans, it takes several repetitions before it starts to sink in. LOVE, is really the only way to approach anything and everything! Period! I don’t mean to be mushy and all “touchy-feely”, no I mean to react with kindness, compassion and genuine concern. Not to react with anger, violence, jealousy or resentment!
Remember… know that love is the opposite of logic. Logic is argumentative, aggressive upon the mind, splits the world into right and wrong, us and them. Love is generative, compassionate, embracing all creation. Logic pays attention to what is being said. Love pays attention to how things are said. Logic leads to debate. Love leads to communion. Practice love to be closer to God… to be closer to one another!
Another way to be closer to one another is by creating some of these recipes. No matter what time of year it is, LIFE is a time for celebrating! We might as well continue on that path and create the most decadent treat that you can bring to someone’s house to share. Cheesecake is probably the most sought after dessert when indulging our palates! Not all cheesecakes are created equal, though. There are many different varieties and styles, many different recipes and cooking techniques. Of course I am going to say that my cheesecake recipe is the best and rightfully so. There is a secret ingredient that will not be a secret after today!
Techniques on how to bake differ too, but this recipe treats the cheesecake like a custard. The cheesecakes are baked in a water bath which allows for a “softer” heat. Baking at a lower temperature for a longer period vs a higher heat for a shorter period prevents the cheesecake from “cracking”.
After years of baking cheesecakes for the best results and to prevent the water from seeping in the bottom, I use solid cake pans, lined with parchment paper vs a spring-form pan, where you have to seal the bottom, which is a lot of extra work.
Here is the recipe for the No.1 Cheesecake
32 oz. (4 – 8 oz. Packages) Good quality cream cheese
1 ½ – cups granulated sugar
4 – eggs
2 – teaspoons pure vanilla extract
1 – Tablespoon lemon, key lime or orange juice – your choice
3 – Tablespoons flour
3 – Tablespoons cornstarch
4 oz. (1 stick) – unsalted butter melted then cooled slightly
1 – pint (16 oz.) sour cream
2 ½ – cups graham cracker crumbs
4 – Tablespoon Melted butter
Melt the butter and then gradually add to the graham cracker crumb mixture. Do not add to much butter. Once the mixture is damp but not saturated put into “Pam” sprayed and lined cake pan. Bake for about ten minutes in a three hundred twenty five-degree oven. Remove from oven and reserve for cheesecake batter.
*Side note: You can use a thin slice of a sponge cake in replacement of the graham cracker crust. Just slice a layer cake in half and use that as the bottom crust. This is in a sense, the French method of using cake as the bottom. It has a whole other dimension vs the graham cracker crust. O.K. carry on…
… Beat the cream cheese in a large mixing bowl until smooth. Gradually blend in the sugar. Mix thoroughly. Next, add the eggs, vanilla and citrus juice and blend well. Next, sift in the flour and the cornstarch and blend well. Add the melted butter and blend well. Next, add the sour cream and blend well. In a spring form or regular Professional quality cake pan, that has been sprayed with non-stick spray and lined with parchment paper or wax paper and a crust already pressed in and par baked, pour in the batter. Place the cake into a water bath and bake in a three hundred degree oven for approximately one hour and fifteen minutes or until the center springs back. Turn off the oven and leave the cake in the oven with door closed until cooled down. Refrigerate for four hours minimum, preferably overnight. Remove from pan and serve plain, with your favorite fresh fruit puree or chocolate sauce or seasonal fresh fruit.
Now, this moment is the most important moment of your life!!! Not yesterdays achievements or mishaps and definitely not tomorrows! Right now, so take this moment and make it the best moment you possibly can. That is all you can really do. Then, if you keep repeating the process you will find that your life will be less stressful, more productive and easy going!
