With the “Super-Bowl” coming up soon, everyone is preparing for the big game day. Some people are buying new “flat screens” to watch the game on. Others are stocking up the bar and fridge with game day beverages. Munchies are a big part, too! You gotta’ have some “Super-Bowl” munchies that are over the top (of the goal post, that is, for a big SCORE)!
There needs to be a question asked though, at this point. Why do you take so much time planning for the big game day (We’re not saying that this is bad, but…) and why don’t you put the same amount of energy, at least, into the biggest game day ever? What day is that, you say?
It is everyday that YOU wake up, my friends! Yes, everyday should be the “Super-Bowl” of your life! YOU are the MVP player everyday of your life and if you’re not, now is the time to fix that! As you can see, you can muster up the energy game day, so why not everyday! Once you realize that the biggest game, the biggest SCORE of all, is another day of LIFE, then you won’t have a hard time doing that! Plus, when you have true “gratitude” and create an aura of “Gladitude” around you, you will create an energy field that will be hard to tackle or resist! Talking about hard to resist are today’s recipes.
Wings are a hit anywhere you go, especially in the good ole’ USA. Now most people like to “shuffle off to Buffalo” for the most known wings, “Buffalo wings”! Hey, those are great wings, don’t get me wrong, but there are so many other flavor profiles and cooking techniques to choose from.
With a healthier conscious lifestyle that is enveloping America today, grilling or roasting in the oven is a healthier alternative. Don’t get me wrong, though, grilling or roasting is a very tasty way to cook the wings vs using the fryer and seriously, would never be looked at as “Healthier”, even though it is! The following can be either grilled or oven roasted. No matter how you prepare these wings, just prepare you mouth! You know what time it is, that’s right folks, it’s time for a super “Mouthgasm”!
O.K. saying all that made me hungry and talking about the “Super-Bowl”, has got me craving some good munchies! So, with that in mind (yes, my mind), this will be the first in a series of “Super-Bowl” munchies. Even though these are serious munchies, they are not that hard to make. Get ready to “SCORE” and your taste-buds will soon be screaming, “Touchdown”!
Mango’s Southern Peach-Glazed Wings
Much different than traditional Buffalo wings, this recipe offers a “sweet and spicy” combination.
(Left) Side note: Try using turkey wings instead, in this recipe. They are bigger, meatier and just “MORE FUN”! (Fred Flintstone would be super happy!) If you are not into the turkey wings, chicken wings can be used! A bunch of wings (Don’t know how many people are coming over!) – let’s say
- 5# minimum
THE “NOT SO BASIC’’ GLAZE
Depending on how many wings you may want to double this recipe (if you have any glaze leftover and has not been in the same bowl as any raw meat, you can use as a dip for the wings)
- 1 – stick unsalted butter
- ½ jar (18 oz. size) – Peach preserves
- 2-3 Tablespoons – Fresh chopped garlic
- 1-2 Tablespoons – Mango’s Everyday Seasoning mixture (or any low sodium Cajun seasoning) – or to taste
- 1-2 Tablespoons – Jamaican Jerk seasoning – or to taste
Take all of the above ingredients and cook down in a saucepan, stirring occasionally. Let simmer for just a several minutes. Remove from heat and either use now or let cool. Once cool, store in a jar or Tupperware for future use. (Once cooled and refrigerated, you will need to reheat the glaze in order to baste or glaze your chicken).
Pre-heat oven to 400 degrees
Next, toss the wings in a bowl with a little olive oil and a generous portion of your Jerk seasoning. Place on a foil lined, non-stick sprayed sheet pan and bake for 20 minutes or so. Remove and now, glaze. Then finish cooking for another 10 minutes or until nice and golden brown. (Grill in the same fashion).
(Right) Side note: You don’t glaze the wings until they are almost cooked. The glaze caramelizes to quickly and will burn, so don’t toss your wings in the glaze until near the end of your cooking time. Using tongs, remove the partially cooked wings from the sheet pan and place in a bowl. Toss with your glaze and then place back on a foil lined, non-stick sprayed, sheet pan. Place back into the oven and finish cooking at this point. Remove pan from oven and remove wings using tongs. Place on serving plate. Let rest, for 5 minutes or so, covered with some foil. This will allow the “Juices” to flow and you won’t burn your tongue on the hot glaze!
(Either) Side note: If you want to create a little variety, buy some good b-b-q sauce, some Schezwan sauce from the oriental section or any other glazes that are out there these days! Then divide the wings into several bowls and place your variety of sauces in them and toss some wings in each one and finish cooking. Now you have a variety of sauced wings that will give your party a great zing! Plus it is always good to reserve some of the glazes to dip in afterwards!
O.K. as you can see, these wings are pretty simple to make. You will be the MVP of the party and you will score some big points with your guest when you make some of Mango’s wings.
