Life is nothing like a fairy tale. In fact in many cases it may seem like a “Nancy Drew Mystery!” One never knows what “lurks” around the corner, so what is important as we travel down the road called life is how we react to situations, good and bad!
Now, one would say, that everyone knows how to act when times are good. Sometimes though, our “egos” might get inflated and in turn, we could hurt others, who may not be doing so well at that juncture in life! Plus, many times, we forget to be grateful, to have “Gladitude”, in our good times. Since life is like a “life monitor” at the hospital, it goes up and down, so realize that at any given moment, your situation could change.
If you are spiritual in nature, then one would understand that God (or your higher power or consciousness) is just testing you, giving you lessons to grow with. Others may look at these times as “bad” times, but honestly there really are no “bad” times… just “challenging” times! Mango has learned that there are never problems, just challenges! In just about every instance, if you apply yourself, say a prayer and have faith and hope, that things usually work out in the long run. In fact, next time a situation comes up that you seem overwhelmed with, say to yourself… “self, is this going to be a challenge tomorrow, in a week from now, in a month from now… in a year from now?” Well if it is not going to be a challenge in any of those time frames, then it is technically not a challenge “NOW!” It is just a passing situation, a stumbling block, a pot-hole in life!
Now let’s combine the last few articles. Communication and respect goes hand in hand! Everyone needs to be more considerate when communicating. Having respect for one another is at the utmost importance outside of gossiping. Gossiping is a terrible form of communication, because it is hurting our fellow brothers and sisters. Have respect for everyone, even those that seem “unworthy”, they are still our brothers and sisters and need just a little more attention and care.
With Easter approaching, Mango felt that it is a good time to give you a treat. Now today’s treat is definitely going to create “Multiple Mouthgasms!” Since we have missed out the last couple of days, Mango says, “Let’s party” and celebrate “LIFE!” Even though we should always be learning and growing, no one ever said that life should not be fun! So get ready to share today’s recipe (well, actually the results of today’s recipe), because even the Easter bunny is going to be having a major “Mouthgasm” after having a bite of this decadent dessert! Happy Easter, be thankful and here’s the recipe!
Mango’s Red Velvet Cheesecake
- 2 – Cup Chocolate Cookies (Crushed)
- 1 – Tablespoon Brown Sugar
- 2 to 4 Tablespoons Butter (Melted)
- 4 – 8 oz. cream cheese, softened
- 1 ½ – cups sugar
- 4 – Eggs
- 1 – Tablespoon Vanilla
- 1 – teaspoon white vinegar
- 4 – Tablespoons each of: Flour, Cocoa, Cornstarch
- ½ – cup Sour Cream
- 2/3 – cup Buttermilk and 1 – Ounces red food coloring*
- 1 – Stick melted Unsalted butter
Prepare crust and press into “wax paper” lined cake pan. Bake @ 350 degrees for about 5 minutes.
In a large mixer bowl, beat cream cheese until smooth. Slowly add sugar and mix well. Add eggs, one at a time, until thoroughly incorporated. Add vanilla, vinegar and mix into batter. Add the dry ingredients and mix well. Next add the melted butter and mix. Finish with the sour cream and the *buttermilk mixture (food coloring and buttermilk mixed together). Pour into your prepared cake pan.
Place cake pan onto sheet pan and place into 300 degree oven. Fill the pan with water, creating a water bath for the cheesecake to bake in, like a custard. Bake for approximately 1 ½ to 2 hours or until the center is firm to the touch. Turn off oven and let cake sit in oven for several hours. Remove and let finish cooling on rack. Place into refrigeration for at least 6 to 8 hours.
Once the cake is cooled and removed from the pan, finish cheesecake with a cream cheese frosting:
- 1 – 8 oz. package cream cheese, softened
- 4 Tablespoons (1/2 stick) – Unsalted butter, softened
- 1 cup or to taste – 10X sugar, sifted
- 1 teaspoon Vanilla
Mix all the above ingredients until well blended. Spread a thin layer or to taste, on top of cheesecake. Slice and serve cold.
You better buckle yourself down, because once you start to eat this cheesecake, you may just “Fly off of your seat” with the mightiest “Mouthgasm” ever! Invite over some friends, brew up some coffee or make some fun coffee drinks and have a party! Remember that you are doing a huge part in creating “World Peace”, one “Mouthgasm” at a time!
In closing folks, remember that life is a “GIFT!” Treat each other with love and kindness, there is NO room for anger, jealousy, resentment, hate, prejudice or anything that is not “LOVE!” When you realize that nothing is as important as each and every one of us, that our whole purpose is to learn how to live with one another, in a peaceful, beautiful co-existence, then my friends, we have created, “heaven” on earth!
