It’s Dec. 28 and everyone is more than a little tired of ham. Small problem, however–you bought a 15 pound and there is quite a bit left. With the New Year sneaking up, you’re resolving to lose weight from Christmas indulgence. Here are dual purpose diet holiday recipes and low salt foods to use up leftover ham and Christmas smoked meat leftovers in light, delicious ways. These diet holiday recipes are great for sweeter honey baked ham leftovers use up (that kind of ham is harder to repurpose).
Apple hamwich spread: Trim ham fat and coarsely grind in food processor with other holiday leftovers: cored, peeled apples, carrots, cucumbers, green peppers, cranberries, celery and onions (optional). Chop holiday nuts–walnuts, almonds or pecans–and add if desired. Blend with reduced fat olive oil mayonnaise (or cider vinegar and olive oil). Season with cracked pepper and celery seed. Spread on light sandwich bread. Or for more diet holiday recipes–serve on romaine lettuce, spinach or kale.
Low salt leftover ham bean soup. Boil ham bone with one bag of rinsed, sorted Hambeens 15 Bean Soup on medium-low for two hours. Reduce heat sliced carrots or diced winter squash, sliced celery, chopped onion, kale and purple cabbage and several large bay leaves. Season with ground pepper. Simmer until beans are tender. Remove ham bones.
Ham n yam soup. Substitute diced yams, winter squash (amber, butternut, turban, acorn) or sweet potatoes in the recipe above. Caramelize onions before adding for a sweeter soup. Cook with leftover ham or smoked meat and dash of maple syrup. Add almond milk for a creamy soup. For healthier diet holiday recipes, thicken soups, pudding and custard with mashed avocado instead of eggs.
Leftover ham scalloped potatoes. Scrub and slice 6-8 large cooking potatoes. Spray a glass baking dish with cooking oil. Place a layer of potatoes in dish. Arrange ham over potatoes. Dot with light yogurt butter. Sprinkle flaxseed (instead of flour), chopped onions, dill weed and black pepper over potatoes. Make several layers. Pour one and one half cup almond or coconut milk over potatoes. Cover baking dish and bake at 400 for about an hour. Potatoes are done when they are tender and sauce has thickened. For lighter low salt cheesy potatoes, try feta cheese.
Diced ham or smoked meat topping: Cube leftover ham or smoked meat and freeze. Use as a quick add-in, for soup, pizza, Cobb or Chef’s salad or pizza topping. Use up cubed ham leftovers and low salt cheese in homemade bread machine bread. Use whatever setting you normally would for nut or fruit bread. Add garlic, dill weed and minced onion for a piquant delicious supper bread. Swing to lighter diet holiday recipes using reduced fat and low salt ham and cheese. Substitute 10-grain flour for wheat.
Smoked meat or ham stuffed squash: Halve and clean acorn squash (one half per diner). Fill cavity with cubed ham leftovers, raisins, apples and one teas. light low salt butter or olive oil butter. Blend molasses and blue agave syrup and drizzle over squash. Place in glass baking dish (filled side up) and add half inch of water. Bake covered till tender and uncovered about 10 minutes to brown.
