Let’s hope the snow has had it last hurrah! It’s time to think spring as the daffodils and tulips are blooming and accenting our gardens with beautiful colors. And time to clean up the grill, think about spring brunches or lunches and entertaining guests in your garden or on the patio.
The very talented Josephine Proul, Executive Chef/Owner of Local 111, the award-winning restaurant in Philmont, is the perfect chef to hold a Master Class on Creating the Ultimate Seasonal Lunch (brunch or dinner). Chef Josephine will demonstrate how you can master a delectable menu for entertaining with ease while having fun with your guests. She will be hosting two demonstrations and tastings at the Hillsdale General Store and HGS Home Chef on Saturday, April 16 and Saturday, May 14 from 11 a.m. to 1:30 p.m.
Chef Josephine is known as the local food “networker” as a result of her dedication in supporting and cultivating lasting relationships with local farmers, purveyors, chefs and members of her community. She explains that in her demonstrations and tastings she will show guests how seamless entertaining can be when one has the tricks to make the cooking process easier so the hostess can enjoy the party.
For Creating the Ultimate Seasonal Lunch on April 16, the menu includes:
- Cured and smoked hot salmon*
- Quick Biscuits and Herby Sandwich Spread, for Salmon BLTs
- Asparagus and Mornay with Poached Eggs
- Our Favorite Brown Sugar Vinaigrette with beets and peanuts
- Ice Box Cake
*The salmon will be salt, spice and sugar-cured, then hot smoked on the grill.
Foraged and Local Savory Snacks on Saturday, May 14 will include local ramps foraged by the chef and pork spareribs from Pigasso Farms
For this irresistible menu, recipes will include:
- Baked Cheese Curds with Wild Ramp Dip
- Quick Stromboli with Cured Meats
- Made-from-scratch Giardiniera
- Two types of nuts
- Smokey Slow-Baked Spare Ribs
- Potato Croquettes with Spicy Ketchup.
Classes are limited to 30 guests. Tickets for the demonstration and tasting are $70 per person (with a $4.84 Eventbrite surcharge) and can be purchased here. Purchase tickets early as they will surely go quickly for this popular local chef. Josephine Proul is a recipient of the fourth Annual Victoria A. Simons Locavore Award for her commitments to using local products and helping community growth. She has appeared on the Food Network’s “Chopped” program and will be making another appearance on the Food Network in July.
