Life before Nutella was, according to some, boring! Yes, Nutella has quite a following and no wonder, it is a creamy, Hazelnut chocolate spread created, where else, Italy! The Italians for sure, know how to spread a little “Love”! Love, that is definitely what needs to be spread around more these days.
From shootings everywhere, road rage, wars out of control around the world! What IS this world coming to? It is up to each and every individual to take part in change. We all can’t change what is happening around the world but we each can make an effort daily, by being kind to all we pass along our journey. In every situation it is our choice of what we do, how we react and how we choose to treat one another. Seriously, in most cases you only have two choices: one is to be kind and the other is not to be kind. One is to react with love and the other is to react with anger. Hate is the opposite of love.
Like when making quick breads or muffins. You can over mix and make the muffins tough in texture or you can gently fold the ingredients together, to create a tender, delicious muffin. Let’s choose the second technique, it is more “Loving”.
Quick breads or muffins, are a great little treat that can compliment any meal. It is a great breakfast treat, to have with your morning coffee or it can go great with a slice of quiche for lunch! Nice compliment to a brunch basket of breads or you can slice them in half, slather it with butter and grill it on the flat-top or in a skillet till golden crusty. Yummy, you know it is getting time for what? That is right, Mango-heads, it is getting time for today’s “MJM Mouthgasm”!
If you don’t have muffin tins, then you can make a quick bread or loaf cake, too. Now todays recipe includes our friend from Italy, Nutella and because today is “National Nutella day”, here is todays recipe for Nutella chocolate, chocolate chip loaf (or muffins).
P.S. The trick with making muffins or quick breads, is to “not over-mix”. This tends to make the muffins have a tough texture.
Nutella chocolate, chocolate chip muffins
- 1/3 – cup vegetable oil (or coconut oil)
- 1 – cup milk (whole or 2%)
- 1 – large egg
- 1 – teaspoon vanilla extract
- 2 – Tablespoons, Nutella spread
- 2 – Tablespoons sour cream
- 2 – cups A.P. unbleached flour, sifted
- 1/4 – cup cocoa powder
- 1 – Tablespoon baking powder
- 1 – teaspoon Kosher salt
- Dash of nutmeg
- Dash of cayenne pepper
- 1/2 – cup raw sugar (white is fine to use)
- 1 – cups dark chocolate chips (semi-sweet can be used or a mixture) dredged in a little flour
- Cinnamon sugar to top with
Preheat the oven to 350 degrees. Line muffin tin with cupcake liners or non-stick spray and line the loaf tins and set aside.
Mix the first six ingredients in a separate, larger bowl (the wet ingredients). In a separate bowl, mix the next seven ingredients (the dry ingredients). Gently fold in the dry ingredients into the wet ingredients. DO NOT over-mix! Again gently fold in the chocolate chips. It will look lumpy and maybe, even a few flour specks will still be in the batter.
Using a ice cream scoop, scoop the batter into the cupcake liners or your prepared loaf tins. Next, sprinkle the cinnamon sugar on top of the muffins. Place your tins, into the pre-heated oven and bake for approximately, 15 to 20 minutes (muffins), 20 to 25 minutes (loafs) or until they spring back to the touch! Remove from the oven and let cool down. Serve warm if possible, but they are really good the next day, too! No matter what, get ready for a major “MJM Mouthgasm”!
