Have you noticed the tension in the world? Well, it seems before anything gets better, it seems to gets worse, first! Did anyone mention that the economy is not getting better for everyone, either! The amount of home-less people has grown considerably and with that, the amount of “home-less” children has taken a toll. Many children go to school hungry and our system has not stepped up to the responsibility of taking care of the people in our world.
When there is so much abundance out there, why is it that it is not evenly distributed? Some people seem to have an overly amount of abundance, whereas others are barely scraping by! It is up to each individual to help others, sure we can blame our country, our system or anyone else that we can think of. The truth is that many of us has the capability to help! To help those less fortunate than others and it is not always the fault of the others that has put them into that situation. We never know what path that person has walked, we have not experienced what that person has gone through and until you “walk” in their shoes, you have no clue! It is not up to us to judge, either! Because we don’t know the whole story, the only thing that should concern us is the fact that someone needs help and that we have the ability to help, so just “DO IT”!
Unfortunately we sometimes “Black-out” to the realities around us and get consumed with ourselves. Slow down, focus, breathe in deeply and then take another look at what is going on around you. You just might be surprised at what you really see!
Well, today is “National Chocolate cake day”. Chocolate cake is like a great big “HUG” (and we all know that the world is in need of #HUGS)! Hugs and chocolate cake, makes you feel good all inside! Chocolate actually does emit some endorphins which makes us feel GOOD! When you feel good inside, then it is easier to help others to feel good. If you make any chocolate cake and share it, then you are doing your part in helping the world to feel better!
Now, not all chocolate cakes are created equal. There are so many recipes out there, from Devils food cake, sour cream chocolate cake, one-bowl mayonnaise chocolate cake, the possibilities are endless! The following recipe is a recipe that has been in my repertoire for a long time. It is an almost “flourless” chocolate cake. It gets its structure from egg-whites that are made into a meringue and then folded into the batter.
The reason it is called “Bobbies Black out cake” is because this guy named Bobbie, actually passed out (had a few to many martini’s) and fell face first into the cake on his plate! It was quite funny and he never lived that one down! He was a friend of the owner of a restaurant that I opened in Southern L.A., called “The Bayou”. This was one of the desserts that was created for their menu.
It has an intense chocolate flavor, yet it is light and airy. It is basically a chocolate mousse cake. You can flavor it with your favorite liqueur and top it off with a mound of fresh whipped cream and seasonal berries. You may want to make some raspberry, strawberry and/or chocolate sauce to drizzle around the plate, too! This is a great cake to make and store in the freezer for those unexpected guest! It defrost quickly and doesn’t take up a lot of room in the freezer.
BOBBIES “BLACK-OUT” CAKE
- 5 oz. Semi sweet, dark or milk chocolate – melted in a double boiler
- 6 oz. unsalted butter – room temperature
Blend together, then add to above ingredients:
- ¾ – cup Sugar
- 6 – egg yolks @ room temperature
- ¼ – cup liqueur like Kahlua, Frangelico, Amaretto, Godiva Chocolate liqueur
Then sift into the above ingredients:
- 4 ½ – Tablespoons all-purpose flour
Then fold in:
- 6 – egg whites whipped into a nice meringue
In a non-stick sprayed and wax paper lined eight-inch cake pan, gently pour in the batter. Place into a water bath and bake in a pre-heated, three hundred twenty five-degree oven, for approximately one hour ten minutes. Remove from oven and cool. Refrigerate and serve with fresh whipped cream and seasonal berries preferably raspberries or strawberries. Serve with a big cloud of “Fresh whipped Cream” and MJM chocolate sauce and/or raspberry puree’.
Wow, your taste-buds should be salivating by now! Hey, you know what time it is? That is right, it is time for another one of Mango’s “Mouthgasms”! You shouldn’t hog it all for yourself, either! Go ahead and share your creation! Then you will be spreading some love and a few more “Mouthgasms” to boot!
Today, go and buy some food or a grocery store gift card and then, go make someone else’s day and give that gift of food! It you are where it is cold, bring a few extra blankets, a jacket if possible, some gloves or even some nice, heavy duty socks. By sharing these simple gifts you are making a #change in the world for the better! You can never share too much #LOVE! Remember this, you could be in their shoes (if they even have any) and you could be the one receiving those gifts! Just think how you would feel? You would feel loved at that moment and isn’t that what we all crave?! A little LOVE goes a long way and so does a little chocolate!
