Experimenting with seasonings is encouraged but below find the basic seasoning recipe:
Spices to mix for seasoning
2 Tbsp. good quality chill powder
1 tsp. ground or aopprox. 2 fresh tsp. oregano
2 Tbsp. ground cumin
level tsp. of coriander
level tsp. of onion powder
1/2 -1 tsp. minced garlic (optional)
1/4- 1/2 tsp. cayenne pepper to taste (careful it’s hot!)
Sea salt to taste
1 tsp. ground pepper or to taste
2 small shakes of cinnamon powder
Note: Instead of the cayenne, you can add a few good shakes of piri piri or any hot pepper sauce to the mixture while cooking.
Combine all the dry powders for the dry seasoning and store in a plastic baggy. For 6 tacos (recipe below) start with approximately 2 Tbsp. of the seasoning and add more to taste.
To make 6 tacos:
1/2 -3/4 lb ground beef
1/2 cup of water
6 hard corn taco shells
1- 1 1/2 cups of grated cheese (cheddar or cheddar/mozza combo)
1- 1 1/2 diced tomato
1/2 lettuce head chopped- approx.
1 chopped green onion (optional)
finely chopped fresh or pickled jalapeños- for sprinkling on top (optional)
2 Tbsp. plus more to taste
Tub of sour cream
Jar of preferred salsa or salsa sauce
Complete taco method: (for 6 tacos)
Brown ground beef till cooked through.
Add 2 Tbsp. of the seasoning
Add 1/2 cup of water
*Taste test and see if more seasoning is needed
While the taco meat with seasoning is cooking, arrange garnishes in separate bowls or on a large platter with spoons. When meat is done, scoop a few tablespoons into taco shells and garnish with desired toppings. Finish with a dollop of sour cream and a few teaspoons of salsa. This recipe will make about 6 tacos. The only hard part is judging how much to make. Usually two tacos each is a fair guess but people have been known to eat more, so making enough for three each will be about the maximum. The ‘complete taco method’ above is easy to double up.
Also-you can make twice as much of the seasoning at once or more if you are a true taco lover. Not only will making your own no-fuss homemade taco seasoning impress your friends but it is a naturally healthy meal as long as not too much salt is used.
