Loving these basics, may mean that a twist on the recipe maybe taking it to the next level, to, dare I say it? Obsession.
One quick walk through the book will render such recipe titles as: gingerbread french toast with lemon curd ice cream, lemon waffles, chocolate mint crepes, cherry jubilee, coconut chocolate pancakes, and a decadent, oreo pancakes with chocolate fudge sauce. Hannah Miles the author, loves pancakes, crepes, waffles and egg-drenched bread, and that’s truly inherent in the rendering.
She has great tips including one that almost everyone makes a mistake with, and that’s over-greasing the pan; she uses butter and wipes it down with a paper towel following, in order to remove any excess fat or puddles to burn. She also suggests that you leave the batter to rest for a specified time because this allows the gluten in the flour to relax, and if baking powder is involved, bubbles start forming in the batter which is exactly what you want for light airy product.
Miles also talks about the consistency of the batter, when to turn your pancakes, and other perfection tips in regards to these great tempting breakfast, lunch, brunch or even decadent dessert recipes.
There are brightly colored photographs of each recipe on the opposite page that bring to life the lusciousness of each dessert. We were surprised to see that there were also savory recipes such as: ham and cheese crepes, creamy chicken crepes, and welsh rarebit waffles.
It’s interesting to note that the author is English so some of the recipes terms are different such as, she calls granulated sugar “caster sugar”, but she always defines it very clearly. Most of the recipes are made from scratch using self rising flour, baking powder, sugar and salt.
