If you have ever surfed, like really surfing in deep waters, you grow and learn to respect the power of the water. If not, you will be consumed and taken over and in most cases, lose to the power of the ocean. Once the water pulls you under, if you fight or resist, it will wear you down and then, you lose the fight and the ocean wins.
Now if you let go and go with the flow, in most cases you will be pulled to the surface and survive. Life is the same way, seriously. Life is like being out in the ocean and the currents are pulling you in many different directions. If you are constantly trying to figure out everything, well, let us just say, you won’t and never will! That is life! Life is not meant to be understood all of the time, in fact, most of the time, things are really never understood.
So like when surfing, if you resist what is happening in your life, instead of going with the flow, you will wear yourself down… physically and mentally! There are many discussions, about if life. Does it just happen or do we have choices. This was discussed a few articles ago, too. As mentioned in the past article, life is like the game show, “Let’s make a deal.” In that show, you often got to choose from multiple items, boxes or doors. Ultimately you had to choose one of the options and that was your prize or in some cases, a big ZILCH, nothing, notta!
Life is the same, in a sense. Maybe our destiny’s are predetermined with several different endings. Depending on our choices is how our “ending’s” happen. If we choose door number one, maybe it is the best choice, with great endings! If we choose door number two, maybe that was a good choice and good things will happen with good endings. Then, maybe, if we chose door number three, maybe that took us down darker paths with not so great endings. Again, same person, different choices… different results.
The interesting part of life, is that we were born with the brain/mind that we have. Now we do, again, have choices to learn more, to develop more and to become a smarter, wiser person. The simple fact, though is that our decisions are only based on what we know, deep inside. It is those thoughts that create the actions that we take. NONE of us, did I say NONE, were programmed the same as another human being on this earth. So with that said, none of us are going to have the same thoughts or conclusions regarding a certain subject or thought.
Now that is where the challenges comes in. We can only act based on our minds. In most cases, we make the best decisions based on what we know. Often, it is wise to discuss an important issues with others to get a more balanced view on an important decision. As the world develops, mankind will make decisions based more on a group decision versus a singular decision of one person. This will create a more universal and harmonious world. Until then, we have to learn to grow and love one another and have patience! Patience with ourselves and to understand and learn on a daily basis, about one another and how we can learn to live among one another in harmony and peace.
You know that “Mango” likes to compare the world of mankind to the world of “Food!” The food world is so similar to life, that it is easy to make the comparison. For instance, today we are discussing the blending of cultures and the betterment of ourselves. Well, vinaigrettes are one thing that the ingredients tend to want to separate. In order to keep everything together, we “emulsify” to create a blending of opposing ingredients, such as oil and vinegar.
Like in mankind, if we incorporate another view or another person into the mix, it tends to bring things together. Well, the same goes with the food world, in this case, if you incorporate a “protein”, like an egg yolk, that will bring the oil and vinegar together in “Holy matrimony”, to create a creamy vinaigrette. So the protein is like making it better, without changing the taste, it is just richer and more inviting to the “taste-buds”, if you know what I mean, Vern and you know what that means, yes sir (or maim)… it is time for another one of Mango’s “Mouthgasms!”
Today’s recipe is in tribute to my first teacher in culinary school that really took me under his wing, Chef Gerhard Brill. He was the chef at Commander’s Palace in the beginning and has done many great things since then (and before, too). Unfortunately, I recently learned that he passed away the beginning of this year. R.I.P. chef, I am sure you are creating some great meals for God and the rest of the greats up in heaven!
The following is one of the dressings that came from him at his own restaurant called “Gambrills”, in New Orleans. This was the “house” dressing, a raspberry walnut salad dressing. Now, in this case, the protein which binds everything together was our house-made mayonnaise. You can use store bought, it won’t change the taste too much.
Left side note: The following is restaurant size, in quantity. Mango did not feel like transforming this into a home recipe, but basically divide it by 10 and it should be a nice batch for home! Plus, this is for all of my chef friends, to use at their establishments. Here is Gambrill’s raspberry walnut vinaigrette:
- 1 – gallon prepared mayonnaise
- 5 # – sour cream
- 28 ounces – raspberry puree
- 16 ounces – walnut oil
- 1/2 cup lemon juice
- 2 – Tablespoons black pepper
- 2 – teaspoons Salt
- 2 1/2 # – chopped, roasted pecans
- Raspberry vinegar as needed, to thin to the consistency you like
Whip sour cream, then incorporate the mayonnaise until smooth. Slowly add the puree and then season with the S & P. Next add the lemon juice until incorporated and then, incorporate the walnut oil, slowly, incorporating into the sour cream mixture, using the vinegar to thin, as necessary. Finally add the chopped, roasted pecans and fold into the dressing (don’t blend, if using a mixer or large robot coupe, because it will break down the pecans too much).
Now you can take care of a banquet or use it in your restaurant. In any case, get ready, because your guest will soon be having some major “Mouthgasms”, along with your own foods! Wow, what a great experience that is, to see others enjoying themselves because of all of your hard work and effort that you and your team did to insure that your guest will have the best experience ever!
Isn’t that why we work so hard, because we take pride in seeing others benefit from the efforts that we put out! That is what life should be for everyone! If we all did our best in what ever we do, so that others can benefit in some way to make their lives better, than think about how great the world would be? So that is our goal, then, to be the best “US”, the best that we can be! Not better than someone else, NO! Just the best that we can be and then it is up to each and every one of us to be the best we can be towards one another! That is how the world is going to become “One” and when we will finally become “brothers” and “Sisters” from a different “mother!”
Hey, until next time, remember several things… to approach everything and everyone with “LOVE!” To “SMILE”, because someone is always watching! Finally, to live in the moment… there is plenty of time to think about the future (NOT)! Focus on the moment, because that is all that really counts! Think about it, when the future gets here… it is the “PRESENT!” So, be in the moment, because it was yesterdays future! Oh, yea… this is YOUR LIFE, do something REMARKABLE!
If you always do what you always did… you will always get what you always “GOT!” The question is… is that what you want?!
