Treating obesity is a simple matter of less food in, more exercise out. But it’s not just how much you eat but what that makes you lose weight. Oriental vegetables grown in water are great obesity fighters. Crimini and shitake mushrooms (or any mushrooms), mung bean sprouts, alfalfa sprouts, onion sprouts, broccoli sprouts, radish sprouts, bean sprouts, clover sprouts, bamboo shoots and water chestnuts make sublime egg foo young. Use “land” vegetables like red cabbage, radishes, bok choy, broccoli, napa cabbage, celery cabbage, carrots, leeks, onions and garlic. Make egg foo young vegetarian, or add these protein options: shrimp, salmon, chicken breast, tuna, tofu, miso, scallops, edamame, sesame seeds, pumpkin seeds, chia seeds or pollock. Add cooked vegetables and protein to egg mixture. Add a little more oil to wok and enough egg mixture to cover bottom of wok. As egg mixture cooks, gently slide up side of pan, fold and flip to cook the top, as you would cook an omelet. Serve egg foo young plain or with cooked brown or jasmine rice. You may also serve with healthy gravy. To make egg foo young gravy, bring to boil two cups water and one tbsp. Better Than Bouillon vegetable broth.. In a separate dish, whisk 1-2 tablespoons corn starch or flour in cold water, until dissolved. Slowly add to broth stirring constantly until broth thickens into gravy.
