Trying to keep your meals healthy while ensuring everything tastes great can seem like a bit challenge. And when it comes to eating your vegetables, we may need a departure from our usual salads. Enter Hungry Root, a company which is revolutionizing the way we eat and what we eat, using simple, “vegetable-centric” foods and really delicious recipes, to make it easy to eat better, even when we don’t want to. All of their delicious foods are under 500 calories as well.
I tried several items from Hungry Root over the past few weeks, and each time I was (truly) blown away. When I opened my my shipment, I opted for dessert first, and dove right into the Carrot Cake Bites with coconut milk frosting. I could drink that frosting, it was so good. And it perfectly complemented the carroty, and yummy bites. This is a great sweet treat for entertaining, or eating right out of the box like I did.
Next we dove into making our first vegetable noodle pasta, Celery Root with Sweet Basil Gremolata. I chose to make this on a day I was craving a hearty meal, which was a great test of how great this stuff actually is. We sauteed the celery root and carrot “pasta”, added the sauce (along with some spice and peanuts to add a bit of punch), and topped with Parmesan cheese (also in the packet). This was delicious and surprisingly satisfying, even on a day when I was craving the real pasta version.
We tried one more pasta, Sweet Potato with Creamy Cashew Alfredo, which was also really lovely, and a bit of a refined take on the usual vegetable noodles and red sauce. I am a big fan of cashew cream, and was excited to try this dish to lighten up a usually very heavy meal. It tasted great, and satisfied our cravings for pasta again, which was a win.
Last but not least, we tried the Almond Chickpea Cookie Dough. This sweet treat can be eaten out of the box, and turned out to be a real crowd pleaser, despite the lack of eggs and flour. I was kinda of amazed as to how the cookies turned out to be doughy and gooey, despite the alternative recipe. After making a batch, I decided to eat the rest raw. Who knew chickpeas, sweet potato, and almond butter could marry together in such sweet harmony.
All in all, I loved my Hungry Root experience, and can’t wait to try more options from their tantalizing creations, like Carrot Noodles with Tangy Sriracha Peanut and the Sweet Potato Cacao Mousse. They even have holiday gift packs, so you can send some healthy food love to your family and friends. I am all about at least attempting to be healthy on the holidays!
