Yaaa, Wassup Doc? Yes, Bugs bunny loved his carrots. Why not, they are sweet, crunchy and full of great vitamins. Vitamins that makes you “See” better! Everyone wants good vision, yet we tend to look at life at times with “blinders” on. We might have “tunnel” vision! It is very challenging at times, especially when the media blast so much prejudice and biased view points that influence our minds, if we let it!
Most of the time, our brains do not have enough information, in order to process the real truths. We let our minds grab on to the first thoughts that our minds conceive and that can be dangerous. Seriously, you have to admit that you “jump to conclusions” way to often instead of taking the time to really see what is happening, to get the whole picture. So as you travel down the road of life, remember to think before you speak and try to always speak well of one another. There is NO time for negatives, for back-biting or anything that would make another person unhappy.
One thing that makes everyone happy is great food. One food group that is always good for you is vegetables. Now, if you can take those vegetables and make a killer dessert with them, then you have a real winner. So Bugs knew what veggie he liked, the carrot. The carrot, like mentioned before is a great veggie and it makes a great dessert too!
That is why today is “National Carrot Cake” day! O.K. this is a re-post of a past article, but hey, how could this not be a re-posted for todays celebration when it is the best carrot cake ever created!
Mango’s “24 Karrot” cake is one of those creations. Now this is no ordinary carrot cake. It is considered by many the absolute finest carrot cake this side of the “Rockies” and the other side, too! Gather up a bunch of carrots and the rest of the ingredients and get ready for what? That is right, folks, it is definitely time for a serious “MJM Mouthgasm”!
THE OUTRAGEOUS“24 KARROT” CAKE”
- 1 – Cup Vegetable oil
- 3 – Eggs
- 2 – Teaspoons Vanilla
- 2 – Cups Sugar
- 2 – Cups all-purpose flour
- 2 ½ – Teaspoon Baking soda
- 2 – Teaspoon Cinnamon
- 1 – Teaspoon Allspice
- ½ – Teaspoon Nutmeg
- 1 – Teaspoon Salt
- 8 oz. – Crushed pineapple in pineapple juice, with juice
- 2 – Cups grated carrots (4-5 average carrots, peeled, ends cut off)
- 1 – Cup Sweet Shredded Coconut
- ½ – Cup Currants or Raisins
- 1 – Cup Chopped Nuts (like walnuts, pecans or macadamias)
In a separate bowl sift together all dry ingredients. In a separate bowl, mix the oil, vanilla and eggs until well blended. Next, add sugar until well blended. Then add the flour mixture to the wet ingredients and mix until blended together. Then add the pineapple, carrots, coconut, currants and nuts to the mixture and blend together.
At this point you can bake this recipe in several forms. Pre-heat oven to three hundred, fifty-degrees.
1) 2 – 10” round cake pans: ‘Non-stick’ coated and lined with a wax paper circle. Bake for approximately 30 minutes or until center springs back.
2) 18 – 24 Jumbo muffins: Bake for approximately 20 minutes or so in well greased or ‘Non-stick’ muffin tins
3) 3 Large Bread Pans: Bake for approximately 45 -50 minutes in well-greased and lined bread tins.
If you are using method number one, cool the cakes, wrap them well or put them into large freezer Ziploc baggies and freeze the layers. After frozen remove the cakes, unwrap them and slice them in half horizontally, into four layers (two halves-each cake). Then frost them with the following cream cheese frosting. In either of the other two scenarios, cool the muffins or loaves first or at least refrigerate before frosting. It is preferable to freeze all cake products that will be receiving a delicious layer (or layers) of frosting before frosting. This allows the frosting to go on easier without ripping off the skin or top of the cakes. Top off any of them with the toasted coconut and ENJOY!
Whatever the case may be you’ll want to top it off with the following:
CREAM CHEESE FROSTING
- 2 – 8 oz. packages high quality cream cheese
- 2 – Sticks unsalted butter at room temperature
- 2 – 4 cups 10X sugar (to taste)
- 2 – Teaspoons Vanilla
- 1 – Cup Toasted Coconut, garnish for the top of the cake
Beat together the cream cheese and the butter until smooth and creamy. Next, add the sugar and mix well. Add the vanilla and beat until smooth and creamy. Now you can frost the layers of the cake and then, garnish the top with the toasted coconut.
Well, you know the drill! Go ahead and make this killer “24 Karrot cake” and then invite some friends over. Better yet, bring the cake to work and make everyone’s day a little brighter and definitely a lot tastier. That is what life is about, sharing, caring and treating each other with respect and love!
